Technical sheet written by the domaine:

Appellation : IGP Côtes Catalanes

Grapes: Syrah, Mourvèdre, Grenache, Carignan.

Terroir: limestone, clay-limestone, schist, rolled pebbles.

Vines: 5 to 90 years old. Organic-Biological cultivation and polyculture.

Harvest: manual with sorting in the vineyard and at the cellar.

Vinification: Traditional in concrete tank. Whole cluster maceration. Indigenous yeasts, no additives. Gentle pressing adapted to the vintage and the terroir.

Aging: 8 months of aging in concrete tank and old foudres.

Bottling: by gravity, without fining or filtration.
