Terroir: Schist and limestone.

Grapes: Macabeu and grenache gris

Yields: 18 hl / ha

Harvest: Manual with sorting in the vineyard.

Vine: 60 to 110 years old. Organic farming and polyculture.

Vinification: Gentle pressing adapted to the vintage. Light settling. Indigenous yeasts with no additions.

Aging: 9 months of aging: 20% in new 500L barrels. 80% in old foudres.

Bottling: By gravity, without fining or filtration.
