Mas Combarela, very promising young estate in Terrasses du Larzac
Olivier Faucon produces at Mas Combarela fine organic Languedoc wines, in the Terrasses du Larzac appellation.
The wines come from local grape varieties: grenache, syrah, mourvedre, cinsault, carignan.
Mas Combarela is located in Herault, 30 minutes from Montpellier. The vineyard covers 11 hectares in Terrasses du Larzac appellation. It covers different terroirs with each its particularities: Les Combres, Combarels, Cabanis. The soils are made of clay-limestone, ruffes and pebbles.
Olivier Faucon was not predestined to become a winemaker. He and his wife first had successful careers in marketing and communication, and worked in the largest cities in Europe and Asia. At around age forty, they wanted to return to their origins. While reading the famous comic book "Les ignorants" (Etienne Davodeau) Olivier has a revelation: what he wants is to do is produce wine.
The neo-winemakers therefore embark on a professional retraining. Olivier resumes his studies and passes a BTS in viticulture in Beaune. Then he practices in Burgundy (A-F Gros estate) and in Languedoc, at Mas Cal Demoura alongside Vincent Goumard.
In 2016, Olivier created his own estate, Mas Combarela, and his first vintage came out. His approach is eco-responsible and he conducts his field with respect for the environment. Organic certification is official in 2019. In the vineyard, no use of pesticides or synthetic chemicals. The harvest is manual and followed by a drastic sorting, in a logic of small yields (25hl / ha). Inputs are reduced to a minimum during vinification. At tasting, the wines are fine, elegant, delicate.
This young estate is already recognized by critics and professional guides who have awarded it good marks and great awards. A talent that emerges to be discovered as soon as possible ...
