Sylvain Fadat from Aupilhac, amon the best winemakers in Montpeyroux.
Sylvain Fadat, born in a family of winemakers for 5 generations, created Aupilhac estate in 1989. Located in Montpeyroux, about thirty kilometers north of Montpellier, the estate covers 26 hectares. The cellar is in the heart of the village, in the family house. The estate practices organic and biodynamic agriculture and is certified by the Ecocert & Demeter organizations.
Initially, Sylvain Fadat also produced melons, asparagus, tomatoes and peaches, before devoting himself exclusively to the cultivation of vines in 1992. The beginnings were epic. Indeed, the first 4 years, vinifications were made in tanks of trucks, in the cellar that had not yet roof! An open-air cellar in 1993, then a cellar buried in 1997, are created to store barrels and casks.
The vineyard is separated into 2 distinct terroirs:
- Aupilhac, a place composed of vineyards in terraces exposed south-west, planted mainly wth mourvedre and carignan grape varieties.
- Les Cocalieres, circus (in the form of an amphitheater) exposed north and west, located at 350m altitude. Syrah is the dominant grape variety, complemented by mourvedre and grenache.
The white grape varieties, planted on the northern part of the Cocalieres, are the 4 grape varieties of the Coteaux du Languedoc appellation: roussanne, marsanne, white grenache and vermentino.
Sylvain Fadat considers that work on the vine has more influence on the wine than work in the cellar: regular plowing, organic and biodynamic cultivation, manual grape harvest with optimal maturity, fermentation with native yeasts, raising in casks and barrels . You can only agree when you taste his wines! His wife, Desiree, is in charge of the promotion of the wines with a contagious energy and a great knowledge of his unusual wines. Together they are ambassadors of the traditional Languedoc heritage, but also pioneers to find new terroirs.
Aupilhac wines are in appellation AOP Languedoc, AOP Languedoc-Montpeyroux and PG Mont Baudile
- Lou Maset: the entry-level, declined in red and rose
- Aupilhac: the main cuvee, in a very assertive Languedoc style
- Cocalieres: superior cuvee, finesse and freshness, almost Burgundy-style
Three wines for ageing complete the range:
- Carignan: a pure carignan all in finesse
- La Boda: the ageing wine of the estate, resulting from the "union" ("La Boda" in Spain, native country of Desiree Fadat) of the two terroirs.
- Le Clos: the top of the estate's production from the oldest vines.
