The young winemakers had to present a "cuvée prestige" to showcase their qualitative ambitions. This is achieved with this "Réserve," which isolates their best juices from their oldest vignes (very few clusters, but ultra-concentrated berries!) in a long-aging, rich cuvée that time will soften.

Be careful, this is a wine for aging that is still very young upon its release in 2023; prefer the 2020s if available for tasting in 2023.

For our cuvée Réserve, we select the best grapes from our oldest vines after many hours of manual work and observation. Concentrated and powerful, this wine retains a lot of freshness and suggests great aging potential.

Geology: Triassic soils, clay-limestone with great mineral diversity. Bipyramidal quartz, dolomites, travertines, spilites, etc.

Parcel: Selection of vieilles vignes aged 70 to 110 years, semi-arid slopes facing East, Southeast.

Grapes: 70% Carignan, 30% Grenache Noir.

Vinification:
Whole berries, placed in tanks by a conveyor. Foot crushing. Cold pre-fermentation maceration.
Fermentation with indigenous yeasts.
Vinification in concrete tanks.
Extraction by pumping over.
Long maceration..

Aging:
12 months on fine lees in barrels from Chassin, Claude Gillet, and Damy, 25% new wood..
