Le Roc des Anges IGP Côtes Catalanes "Australe" red 2021


Commentary written by the domaine: We brought Australe back in our luggage in 2001. It comes from a mass selection of serine planted in Saint-Joseph, an ancient variety of syrah. We almost uprooted it so many times! It took 14 years to find its place instead of the seven years given for a natural adaptation cycle. But that was the time it needed to establish itself in the deep layers of the soil. Today, Australe is a tactile and composed wine that unfolds its tannins with finesse.
