Commentary written by the domaine : Carved from the rock, this wine immerses your nose directly into the stone. It comes from schist and is shaped as such, slender and sharp. The material has concentrated on this minerality and not the other way around. A great red wine from schist.

From a plot of Carignan planted in 1913, on a northeast-facing slope, remarkable for the quality of its soil made of decomposed schists rich in iron and silica.

Advice for opening our wines : Decanting is recommended, not for reasons of reduction but for reasons of blossoming, or "waking up" the wine. Do not serve too cold as it would cut off the minerality and mouthfeel (which tightens with the cold) and thus less understanding of the wine.

Grape variety : 100% Carignan.

Alcohol content : 12.5%

Terroir : ancient schists from the compression of pure clays, rich in silica. North slope of Força Réal, village of Montner, Pyrénées-Orientales.

Age of the vines : vine planted in 1913.

Harvest : manual in 20 kg crates

Vinification : traditional, indigenous yeasts, fermentation in 35 hl concrete tanks

Aging : aging in large casks, 8 months.

Bottling : without fining or filtration.

Service : decant before serving, to enjoy a blossomed wine.

Pairings : the finest pairings: Scottish partridge, hare à la royale, blood duck.

Cellaring : 10 years.
