Vineyard: The very steep vineyard makes mechanization impossible. The vines are maintained manually. Treatments are carried out using organic products.

Pruning: Simple Guyot

Harvest: Manual, at full maturity (13° 14°) in crates. Direct pressing of whole bunches

Vinification: Partially destemmed harvest. Fermentation of clear juices after static settling with temperature control in 20 Hl casks

Aging: Wooden tanks and a quarter in barrels of 3 and 4 wines

Cellaring: Best enjoyed between 5 and 7 years
