This cuvée was formerly the cuvée Rémus Plus.

Single-parcel selection, bringing together a few small clos, too small to be vinified separately.

Grape variety: Vouvray and Montlouis-sur-Loire wines are produced from a single grape variety only: CHENIN BLANC or PINEAU de LOIRE. 

Vines: vieilles vignes over 80 years old, ripe grapes (but not botrytised).

Vine growing:  From the outset, all the vines were brought back under cultivation. Ploughing has two essential advantages:
- It avoids the use of chemical products. 
- It forces the roots to plunge deeper into the nearby limestone bedrock. Only the mechanical destruction of surface roots by the ploughshares, together with deep rooting, makes it possible to craft wines of character.
This approach is essential, because without ploughing, the vine establishes itself at the surface and naturally avoids difficulty: thus passing beside, or rather above, the terroir.
