La Revue du Vin de France (Special Issue No. 39, Nov. 2020): This visionary initiated a handcrafted natural sparkling recipe in the early 90s, elegantly dressed with notes of toasted reduction during its barrel aging, candied lemon, and sage; this bottling of light concentration will immediately captivate you with gougères or a not-too-runny Brie de Melun.

Grape variety: 100% chenin
Zero chaptalization, Zero tirage liqueur, Zero dosage liqueur.
Natural sparkling wine made from unusually ripe grapes for sparkling wine production, but whose natural sugar richness at bottling (about 12 g/L) is sufficient for the second fermentation.
During disgorgement, the level is topped up with identical wine (and not with the dosage liqueur usually added for wines made using the traditional method).
A Loire sparkling wine with a dazzling, complex nose, so elegant that one should always have it in their cellar to celebrate all occasions.
Aeration will benefit it.
Serve between 10° to 12° (not at 6° straight from the fridge), to preserve the volume and aromas on the palate.
Food and wine pairing: Perfect as an aperitif, it can accompany an entire meal like a dry white wine.

This lightly sparkling white wine, with no added sugar, is a wonderful discovery. It's all in the design and production to obtain a quality wine that more than replaces a champagne wine, at a price that has nothing in common.
