90/100 RVF. The ancestor of "pet-nat" (for pétillant naturel) so prized today, as a "natural" alternative to sometimes heavily sulfited champagnes. An example of the best in this "no additives" category, thanks to the late Jacky Blot and his decades of experience, fortunately passed on to his children, to refine the quality!

RVF Guide to the Best Wines of France 2022 (Sept. 2021): 90/100. Among sparkling wines, Triple Zero, beautifully toasted and with a calibrated bubble, is the most successful.
RVF Guide to the Best Wines of France 2021 (Nov. 2020): 90/100. Finely toasted, showcasing ripe fruit and remarkable length. A true signature!
La Revue du Vin de France (special issue n°39, Nov. 2020): This visionary initiated a handcrafted natural sparkling recipe in the early 90s, elegantly dressed with notes of toasted reduction during its barrel aging, candied lemon, and sage; this bottling of light concentration will immediately captivate you with gougères or a not-too-runny Brie de Melun.
RVF Guide to the Best Wines of France 2019: 15.5/20. Absolute master of natural sparkling wine, all ripe flesh, slender, with very beautiful grape maturity. Pulpy, golden, and flavorful.
Bettane + Desseauve Guide 2021 (Dec. 2020) : 17/20. This is a small masterpiece, with a mouthful of airy bubbles and a very pure lemony aromatic profile.

Grape variety: 100% chenin
Zero chaptalization, Zero tirage liqueur, Zero dosage liqueur.
Natural sparkling wine made from unusually ripe grapes for sparkling wine production, but whose natural sugar richness at bottling (about 12 g/L) is sufficient for the second fermentation.
During disgorgement, the level is topped up with identical wine (and not with the dosage liqueur usually added for wines made using the traditional method).
A sparkling wine from the Loire with a dazzling, complex nose, so elegant that one should always have it in their cellar to celebrate all occasions.
Aeration will be beneficial.
Serve between 10° to 12° (not at 6° straight from the fridge), to preserve volume and aromas on the palate.
Food and wine pairing: Perfect as an aperitif, it can accompany an entire meal like a dry white wine.
