This cuvée was formerly known as the cuvée Rémus Plus.

Parcel selection, grouping of a few small clos, too small to be individualized.

Grape variety: The wines of Vouvray and Montlouis-sur-Loire are produced exclusively from one grape variety: CHENIN BLANC or PINEAU de LOIRE. 

Vines: old vines over 80 years old, ripe grapes (but not botrytized).

Vine cultivation:  From the beginning, all the vines have been restored to cultivation. Tillage has two essential advantages:
- It helps avoid the use of chemical products. 
- It forces the roots to dive deeper into the nearby limestone bedrock. The mechanical destruction of superficial roots by the plowshares and deep rooting are the only means to produce wines of character.
This approach is crucial, as in the absence of tillage, the vine settles on the surface and does not seek out the challenge: thus missing, or rather going above, the terroir.
