Grape varieties: 100% Carignan. “Le Carignan” made exclusively from Carignan, with grapes harvested at full ripeness. It is the origin, the history, and the very essence of the region.
 
Soil: Clay-limestone terraces with marine fossil deposits from the Tertiary period originating from the Miocene. These foothills of the Larzac (250 m) benefit from underground water tables from the dominating mountain massif.
 
Vinification: 20 days of maceration with frequent punch-downs.
 
Aging: In small casks or demi-muids for 15 to 22 months.
 
Tasting: It is powerful with aromas of black fruits, licorice, and smoke. It always presents a fresh finish, with fruit and crunch ending with enveloping tannins. Of great complexity, it remains silky and long on the palate.
 
Pairings Gastronomic : It pairs well with partridge with chanterelles and can suit spicy cuisine very well.
