RVF Guide to the Best Wines of France 2023 (Sept. 2022): 92/100. "In red, Aupilhac red is sanguine, smooth, peppery, and aniseed, already very charming".

Technical sheet written by the domaine:

Grapes: Mourvèdre 39%, Carignan 28%, Syrah 20%, Grenache 10% and Cinsault 3%

Soil: Terraces on clay-limestone slopes. Calcareous scree (final Jurassic) alternating, depending on the slope, with blue marls from the Miocene: that is to say, marine deposits with oyster fossils.

Vinification: Maceration (15 to 20 days) with punching down. AGING 30 months in small casks, used barrels.

Aging: 26 months in small casks, barrels, and demi-muids.

Tasting: With a dark garnet hue and violet reflections, we discover its aromas of small red fruits and spices, with intense garrigue herbs on the palate and a fresh, thirst-quenching finish.


Gastronomic Pairings: It pairs well with a beef fillet with chanterelles or any red meat and game.
