The 3 cuvées of Côte Rôtie are vinified and aged in exactly the same way so that only their specific terroirs are the source of their different personalities.

Vinification: the vinification, free from any artifice and excessive technique, treats hand-harvested grapes with respect, ensuring that the sought-after typicity is found in the glass. The vinification combines respect for tradition with calculated modernity, such as total or partial destemming and fermentation in self-pumping tanks. Self-pumping tank.

Aging: the aging of about two years takes place in Burgundy barrels of 228 liters and demi-muids of 600 liters (the latter providing an excellent wood/wine ratio). The proportion of new wood remains modest to prioritize the terroir and the purity of the fruit.
