Exposure : East

Age of the vines : 40 years

Aging : for one year in barrels, 50% new and 50% one-wine average, depending on the year.

Each year : Severe bud thinning and green harvesting
Hand-picked
100% destemmed sorting at the vineyard
Fermentation in closed tank

Tasting advice : decant for four hours. Drink at any age: young on their superb fruit. After two years, (ideally wait this period) they are enjoyed for their roundness; even later (eight to ten years in the cellar), on beautiful spicy notes.

Cellaring : it can easily be kept for 8 to 10 years in the cellar.
