This cuvée is the result of blending our parcel of Servoisine with the old vines of Veau. We wanted to bring together vines of the same age to reveal their full essence…

Grape variety: 100% Chardonnay.

Terroir: Vines from the terroir of Servoisine with old vines from the terroir of Veau.

Harvest: Manual with selective sorting in the vineyard.

Vinification: Bud removal and green harvesting. Fermentation starts with indigenous yeasts in tank, then transferred to barrels. Light filtration.

Aging: 12 months, with 50% in new barrels and 50% in one-wine barrels according to the year.
