This old Savoyard grape variety, originating from Saint Jean de Maurienne, produces a fruity and structured wine on the limestone scree of St Jean de la Porte.

Grape variety: Persan

Age of the vines: 2 plots, one 15 years old and the other 35 years old.

Vinification: The Persan is whole-cluster fermented. The maceration lasts about 12 days. The frequency of pump-overs during maceration is determined by tasting.
The aging of this cuvée takes place in 300L and 600L barrels and in concrete eggs on fermentation lees for 12 months.

Tasting & Pairings: This atypical grape variety is surprising with its fruity and spicy nose, reminiscent of marshmallow and violet flowers with a hint of menthol. Its freshness on the palate ensures a beautiful length as well as a strong aging potential.
The Persan can be paired with a tagine, a roast pork, or with sweet/savory dishes such as blood sausage with apples.
