Grapes: Pinot noir

Age of the Vines: 35 years

Vinification: The grapes are hand-harvested and then destemmed. The maceration lasts about 15 days, including a 5-day cold pre-fermentation maceration.
The aging of this cuvée takes place in 300 L barrels on fermentation lees, for about 9 to 12 months.

Tasting & Pairings: The nose is expressive with floral notes of rose petals but also indulgent recalling currants, cherries, and sour cherries. The barrel aging adds some spicy notes. The palate is harmonious
with a soft and fine tannic structure, beautiful vitality.
It pairs very well with a rib of beef or a pierrade to share among friends!
