From a vineyard of 1.14 ha, located in Montord, in the lower part, clay-limestone soil. 4000 plants/ha. Average yields 35hl/ha. Harvest 100% destemmed.

Grape(s): Pinot noir

Terroir: clay-limestone

Vinification: Maceration for 30 days, cold pre-fermentation at 5°C to 7°C for 5/6 days.
Alcoholic fermentation with a tumultuous phase at 23°C for 15 days.
Pumping over and punching down, then when fermentation is complete, post-fermentation for 7 days between 30°C and 35°C.
Malolactic fermentation in barrels (1/3 barrels of 1 wine, 1/3 barrels of 2 wines, 1/3 barrels of 3 wines).
No fining, no filtration, aging for 15 to 18 months.

Tasting: Best enjoyed between 15°C and 17°C with game, red meats.
