TERROIR: Cuvée from a plot where the limestone concentration in the soil is the highest. The nature of the soil for the Pinot Noir is mainly clay-limestone on a limestone base, while it is more clay-siliceous for the Gamay.
FARMING METHOD: Vineyard managed in biodynamics since 1998. The wines we market are solely from the grapes produced by our vines.
AVERAGE AGE OF THE VINES: 50 years.
GRAPE VARIETIES: 85% Pinot Noir; 15% Gamay
VINIFICATION: Placing the harvest in the vat without pumping thanks to a lifting trailer and conveyors. Fermentation with indigenous yeasts. Maceration duration of 7 to 10 days. Light cooling, then vatting off. Gentle pressing.
AGING: Racking and oxygenation after malolactic fermentation. Bottled in the spring following the harvest. The cuvée then continues its aging in our cellar thanks to the natural cork stoppers.
TASTING: Fresh, harmonious on the palate, with a full and gourmet retro-olfaction, marked by notes of red fruits. The fresh and refined finish is enhanced by morello cherry. To be served with duck breasts, roasted, grilled, and sautéed poultry, veal...
