TERROIR: A parcel cuvée where the concentration of limestone in the soil is the highest. The nature of the soil for the Pinot Noir is predominantly clay-limestone on a limestone bedrock, while it is more clay-siliceous for the Gamay.
CULTURAL METHOD: Vineyard managed in biodynamics since 1998. The wines we market are solely made from grapes produced by our vines.
AVERAGE AGE OF VINES: 50 years.
GRAPE VARIETIES: 85% Pinot Noir; 15% Gamay
VINIFICATION: Harvest placed in tank without pumping thanks to an elevating trailer and conveyors. Fermentation using indigenous yeasts. Maceration lasts 7 to 10 days. Light cooling, then racking. Gentle pressing.
AGING: Racking and oxygenation after malolactic fermentation. Bottled in the spring following the harvest. The cuvée then continues its aging in our cellar thanks to natural corks.
TASTING: Fresh, harmonious on the palate, with a gourmet, full retro-olfaction marked by notes of red fruits. The fresh and refined finish is enhanced by the morello cherry. To be served with duck breast, roasted poultry, grilled and sautéed dishes, veal…
