It all starts in the vineyard. Our aim is a respectful cultivation of our terroir, our vines, and our grapes. We work the soil mechanically under the row. De-budding, leaf removal... are done manually.

This cuvée is vinified from a unique grape variety in France, the TRESSALLIER.

"Trésaille" is manually harvested in 25 kg boxes of grapes, on clay-limestone and granitic terroirs of the commune of Cesset where the Domaine des Bérioles is located.

The pressing is done at low pressure using a pneumatic press.

Cold settling (9°C).

Vinification and fermentation at low temperature (13°C) at the start of the process up to 17°C to complete the transformation of sugar into alcohol and achieve a beautiful aromatic balance of the grape variety.

Racking at the end of fermentation.
Aged in vats on fine lees.
Filtration and bottling.

This cuvée, made from the emblematic grape variety of our vineyard, the Tressallier, expresses indulgence, elegance, and finesse.
Thanks to a hand-harvested crop, this charming wine delivers great aromas, well-balanced, with a hint of citrus and a beautiful length on the palate.

To be enjoyed with shellfish, cooked fish. Gazpacho.
