Everything starts in the vineyard. Our goal: a cultivation that respects our terroir, our vines, and our grapes. We work the soil mechanically under the rows. Bud thinning and leaf removal (...) are done manually.

Grape(s): Pinot noir

Terroir: Parcel selection, lieu dit “La Chabanne”. Clay-limestone soils in Saulcet. Full south exposure

Vinification: Manual harvest in 25 kg crates. Manual selective sorting on a sorting table. Destemming followed by fermentation in a truncated wooden vat. Maceration for 26 days (25% whole bunch). Pump-overs and punch downs in the first days. Gentle extraction by infusion of the cap

Aging: 12 months in a 30hl truncated wooden vat.

Food and wine pairing: Gastronomic wine to enjoy with truffled duck parmentier, a bourguignon, a
rack of lamb...

Serving temperature: 14° to 15°C

Tasting note: Balanced and elegant wine opening with beautiful freshness. The aging enhances the aromatic complexity, giving spicy and toasted notes. A beautiful concentration, delicately enveloped by velvety tannins.
