One delights in a subtle, reserved wine, with a pure, saline touch, and a slightly tannic finish, typical of the grape variety.

Everything begins in the vineyard. Our goal is a cultivation that respects our terroir, our vines, and our grapes. We work the soil mechanically under the rows. Bud thinning and leaf removal are done manually.

This cuvée is vinified from a unique grape variety in France, the TRESSALLIER.

"Trésaille" is harvested manually in 25 kg crates of grapes, from the clay-limestone and granitic soils of the commune of Cesset where the Domaine des Bérioles is located.

Pressing is done at low pressure using a pneumatic press.

Cold settling (9°C).

Vinification and fermentation at low temperature (13°C) at the beginning of the process, rising to 17°C to complete the transformation of sugar into alcohol and achieve a beautiful aromatic balance of the grape variety.

Racking at the end of fermentation.
Aging in tank on fine lees.
Filtration and bottling.

This cuvée made from the emblematic grape variety of our vineyard, the Tressallier, expresses indulgence, elegance, and finesse.
Thanks to a hand-harvested crop, this appealing wine delivers great aromas, well-balanced, with a hint of citrus and a beautiful length on the palate.

To be enjoyed with shellfish, cooked fish, and gazpacho.
