Everything begins in the vineyard. Our goal: a culture respectful of our terroir, our vines, and our grapes. We work the soil mechanically under the row. Debudding and leaf stripping (...) are done manually.

Grape varieties: Gamay and Pinot Noir

Terroir: Parcel selection, locality "Les Grandes Brières". Granitic soils in Cesset. Southeast exposure

Vinification: Manual harvest in 25 kg crates. Selective manual sorting on a sorting table. Destemming then vatting in a tronconic wooden vat. Maceration for 26 days (25% whole cluster). Pump-overs and punch-downs in the first days. Gentle extraction by infusion of the cap

Aging: 12 months in a 30hl tronconic wooden vat.

Food and wine pairings: This wine will pair well with red meats, game meats, offal, and charcuterie.

Serving temperature: 14° to 15°C

Tasting note: Les Grandes Brières expresses notes of gourmet red fruits and spices. Aging in a wooden vat provides the wine with a rounded structure, silky tannins, and always a beautiful freshness.
