Age of the vines: 28 years on average

Planting density: 7000 vines/ha and 10,000 vines/ha

VITICULTURE
Vine management: Guyot pruning
Cultivation: no herbicides; tilling, plowing
Treatment strategy: Organic approach (no insecticides, acaricides, or anti-rot...)
Yields: 50 hl/ha Bud thinning, green harvesting, manual harvesting with a first sorting of the grapes

VINIFICATION
Vibrating sorting table: (no screw at the reception of the harvest which allows for pressing whole, uncrushed grapes)
Pneumatic pressing
Fermentation and aging: Fermentation aging on lees in tanks.
