Location: In Touraine, between the banks of the Loire and the Cher. In the municipality of Saint Martin Le Beau, 11ha in Montlouis sur Loire and 3ha in Touraine.
Parcels: Chesnay, La Rochère.
Terroir: Clay Limestone.
Grape variety: Cabernet Franc.
Age of the vines: 30 years.
Vinification: Destemmed, vinified in wooden truncated cone tanks, 5 punch downs, maceration for 3 weeks. Aged for one year in barrels.
Farming method: Guyot pruning - Worked soils - Manual harvesting.
Yields: 30hl/ha.
Density: 6500 vines/hectare.
Alcohol: 12.5% alc./vol
Food and wine pairings: Braised rabbit, coq au vin.
Serving temperature: 17°C
