Terroir: 90% Rolled pebbles, 10% Limestone

Yields: 10hl/ha

Grapes: 45% Syrah, 40% Carignan, 10% Grenache, 5% Mourvèdre

In the vineyards: manual pruning, leaf thinning, manual bud removal, manual green harvesting, controlled natural cover cropping, annual replacement of dead vines, grafting expertise.

Harvest: Manual by grape variety and by parcel

Vinification: destemming, fermentation in stainless steel tanks with indigenous grape yeasts, by grape varieties and parcels, manual punch downs, long maceration of 35 days.

Aging: in Burgundy barrels of 1 wine and older, by grape variety and parcel, for 24 months.

Blending: 1 month before bottling (depending on the moon), wine neither fined nor filtered.
