One of the great cuvées of the domaine, produced in only a few bottles, is a 100% old Carignan. Too few bottles produced, we have never tasted it (we are "entitled" to a few bottles per year!). But to know the "normal" cuvée, the Papète can't be bad :-)

Yields: 20 hl/ha
Grapes: 100% Carignan from a nearly century-old vine from Sophie's grandfather in Lespignan.
In the vineyards: manual pruning, trellising, manual bud thinning, manual green harvesting.
Harvest: Manual
Vinification: destemming, fermentation in stainless steel tanks with the indigenous yeasts from the grapes, by grape variety and by plot, manual punch downs, long maceration of 35 days.
Aging: in Burgundy barrels of 1 wine and older, by grape variety and by plot, for 24 months.
Blending: 1 month before bottling (depending on the moon), wine neither fined nor filtered.
