LOCATION : In the municipality of Parnay, walled vineyard from the 11th century overlooking the Loire.

GRAPE VARIETY : Chenin

TERRIOR AND VINEYARD WORK : Clay-limestone, 30 cm of clayey sand before reaching the so-called Sénonien limestone. 100% soil work, plus natural cover crops. Planting 10,000 vines/ha, mass selection. Vineyard work: organic and biodynamic: Biodyvin label and Ecocert certification.

VINIFICATION : Manual harvesting. Alcoholic fermentation in 400-liter oval barrels with 52mm thickness.
Pneumatic pressing, natural degrees of 12.9°, fermentation duration of 2 months. Aging on fine lees for 9 months. All these operations are carried out at low temperatures in an underground cellar to preserve the fruit in the wine.
