LOCATION: Southeast of Saumur in the municipality of Saumur.
GRAPE VARIETY: Cabernet Franc
TERRIOR AND VINEYARD WORK: Sand over 6 meters, planted at 10,000 vines per hectare, pruned in goblet with stakes. Work done by horse throughout the parcel due to high planting density of 1 meter by 1 meter. Vineyard work: organic and biodynamic, Biodyvin label and Ecocert certification.
VINIFICATION: Manual harvest in crates, sorting table for the harvest before pressing on a conveyor belt. Fermentation in an oval tank at a temperature of 16 to 22 degrees to extract maximum aromas and richness; fermentation finishes at a temperature of 24 degrees. Maceration lasts 8 to 10 days, 100% whole bunches for this cuvée.
