RVF Guide to the Best Wines of France 2024 (Sept 2023) : 96/100. The light degree of the 2021 red signals a return to origins. The youth of the wine allows the syrah to dominate with its aromas of licorice and pepper, while the cabernet imposes its slightly smoky blackcurrant. The uniqueness of the terroir created by Eloi Dürrbach from crushed rocks, the precision of whole cluster vinification of cabernet sauvignon combined with syrah, and the long aging in large casks shape Trévallon rouge, a monument of Provence. The 2021 is one of the few vintages of the decade to present a classic profile, with moderate degrees and beautiful energy.

Trévallon is characterized by long aging. More than 2 years for the reds.
Racking is limited to the strict minimum, the lees at the bottom of the barrels continue to nourish the wine throughout the aging process.
Presentation: For several years, rainfall has been nonexistent in summer. However, in 2021
we had 20 mm in July and 25 mm in August, small but beneficial rains for the vines. One of the coolest summers in recent years: Average temperature of 24°C in July and August compared to 27°C in 2022.
Location: North of the Alpilles
Terroir:
Limestone and clay soil, very stony: Hauterivien and Barrémien, secondary era, lower cretaceous, less than 130 million years
Harvest: Harvest began on September 8 with the Syrah.
We finished with the Cabernet Sauvignon on September 21.
Vinification:
Vinification without destemming, without added yeast, and without sulfur.
Aging for 24 months in large casks. Fining with fresh egg whites, no filtration for bottling.
Grapes:
Cabernet Sauvignon: 50%
Syrah: 50%
Tasting: A very balanced wine on the palate with beautiful rounded tannins.
On the nose: Nose of red fruits, raspberry, cherry...
On the palate: Slightly vegetal, menthol notes that give it freshness. After a few minutes, notes of licorice and damp underbrush emerge.
Service: Serve this wine at 16°C. Decant 1 hour before.
Food pairing: It will pair perfectly with a bull stew.
