WINERY
Vinification : Manual harvest in small crates of 20 kg to respect the grapes as much as possible.
Whole harvest placed in the press after 12 hours in a cold room, to lower the temperature to 6°C to facilitate settling. Indigenous yeasts. Alcoholic and malolactic fermentation in barrels.

Aging : 12 months in demi-muids and barrels
