Cultural technique: Bud thinning, grass cover regulation 1 row out of 2, manual trellising, short pruning, debudding, hoeing, earthing up, weeding, plowing with a winch, cover crops.

Harvest: Manual harvest

Vinification: Minimal intervention, no bâtonnage, no fining, no filtration, separate vinification for each plot, indigenous yeasts.

Aging: 12 months in large wooden casks without new wood and stainless steel tanks for the whites.
