The winemaker's word: "Mr. Roche planted this plot of Carignan in 1892. Sheltered between two hedges of cypress, the vines have bravely endured the years and offer us one of the finest expressions of this emblematic grape variety of the Corbières, the blood of our vineyard."

TERROIR: Fine clay-limestone gravel

CULTIVATION: Biodynamic Demeter.

PRUNING: Goblet

DENSITY: 4000 vines per hectare

AGE OF VINES: Planted in 1892, 50% Riparia Gloire and 50% Rupestris

HARVEST: By hand, in crates.

PRODUCTION: 6,500 bottles

GRAPE VARIETIES: Carignan 19 hl/ha

SELECTION: Triple, in the vineyard, before and after destemming.

VINIFICATION: Biodynamic Demeter.
Wooden tronconic tank and terracotta amphora (35%), fermentation with indigenous yeasts, 30 days maceration, MLF, no additives. No SO2 added before aging.

AGING: 12 months in barrels with stirring of the lees and amphora.
