Terroir: Gravel terraces on clay-limestone soil.

Culture: Biodyvin.

Size: GMow, plow every other row, inter-vine work.

Harvest: Manual sorting in the vineyard and at the winery before destemming.
 
Grape varieties: Mourvèdre and grenache gris.

Winemaking: Grenache Gris in a clay jar with juice/berry maceration for 6 months. Mourvèdre in a stainless steel tank. Fermentation with indigenous yeasts, MLF completed.

Breeding: Assembled and bottled unfined and unfiltered in the month of February

Tasting: Fresh and fruity nose with notes of crushed strawberry. Delicious and smooth palate supported by a subtle tannic structure. Aromatic explosion !

Gastronomic pairings: Perfect with Mediterranean cuisine, tapas, antipasti, grilled fish, pasta alla puttanesca. Fresh goat cheese, fruit chutney. Strawberry salad, lime zest.
