Notably, the VILLA white this year includes 30% of Grenache noir, vinified as white! To obtain a white wine from red grapes, we harvested very small quantities to avoid any crushing of the grapes, then stored them for 24 hours in a cold room before pressing. 
The cold prevents the anthocyanins, allowing us to obtain a magnificent "white" juice, barely amber, without using any additives.
The Grenache noir brings a beautiful aromatic profile and a lovely tension to the wine.

WINEMAKING

The vinification of VILLA MINNA white is carried out in small volume stainless steel tanks, grape variety by grape variety, exclusively using indigenous yeasts present in the grape berries.  
We then allow the malolactic fermentation to occur naturally, which enables our wines to be almost sulfite-free.  
The aging process takes place in small volume stainless steel tanks for the entire vintage.  
The blending of grape varieties is conducted to achieve a harmonious and balanced wine. This is followed by bottling, which takes place at the domaine in the spring following the harvest. We then let the wine settle for a few weeks in bottles before commercialization.
