TASTING:

Appearance: Very beautiful pale yellow gold color with slight green reflections. Bright, luminous, and clear.

Nose: Evokes a beautiful summer in the freshness of morning scents. The flowers gently open before us, while we pick the delicately ripe fruits, peach and apricot, then through the lemongrass, we discover fine scents of underbrush and fir bud.

Palate: It has a perfect balance, between maturity, softness, and liveliness. We find the flowers and fruits, enhanced by a tender charming biscuit note. In the finish, the mineral touch is well present, fine and delicate. It accompanies our thirst and pleasure.

Food Pairings: Vegetable shell soup, fine oysters from claires and endive, scallop salad with raw spinach, devil crayfish, trout in Chablis en papillote, raw salmon fillet with dill, cream sweetbreads casserole, Bresse chicken in sauce, epoisses fondue with marc de Bourgogne, soft cheeses, honey ice cream à la Michel Guérard.
