TASTING:

Appearance: Very beautiful pale yellow gold color with slight green reflections. Bright, luminous, and clear.

On the nose: It is rich, dense, and ripe, revealing baked apple, brioche, then spices, thyme, and white pepper, before giving way to lovely floral and herbal notes, lemongrass, acacia, hawthorn…

On the palate: It is opulent and complex, offering a beautiful balance between freshness and finesse, roundness, softness, and volume. The finish is rich with this fruity, spicy, and floral ensemble, then fades to leave us with purity and elegance.

Food pairings: Hot and cold oysters, scallop skewers, crayfish court bouillon with Chablis, pike with chervil butter, Bresse chicken in creamy sauce, characterful cheeses, sorbets, and petits fours…
