“Great wines are made from ‘simple’ grapes. No winemaking, however perfect, can create what can be obtained naturally. The grape contains this ‘magic’. It is therefore our responsibility not to destroy it. Our winemaking is ‘gentle’ to allow the wine to express itself freely, showcasing its terroir and vintage.”.

Grape variety: 100% syrah

Soils: Highly degraded granite locally named “GORE”.

Lieu-dits: Summit of the Arlettes, East and North slopes.

Average age of the vines: 30 years

Vinification: Fermentation in a 16 hl concrete egg, indigenous yeasts, 100% destemmed, light punching down, fermentation of about three weeks, no oenological products added.

Aging: 224 months in a 600-liter egg, two rackings.

Bottling: Direct from the egg, vacuum sealing, 1 g/l of sulfites.

Tasting: Spicy wine, with very ripe black fruit, built on an exceptional very fresh mineral structure, very fine tannins, a very elegant and sharp wine.
