VINIFICATION: Total destemming. Pre-fermentation maceration and extraction by punching down. Fermentation lasts 30 days. Press wines are discarded. The cuvée is transferred to barrel and aged without sulfur until the following spring, when malolactic fermentation occurs naturally. This first part of aging without sulfur ensures the preservation of the fruit and malolactic fermentation in barrel. A perfectly integrated oak influence.
