Domaine de la Butte Bourgueil "Le Haut de la Butte" red 2023

Technical Sheet written by the domaine

Grape variety: 100% Cabernet Franc.

Age of the vines:
approximately 35 years.

Soil:
Mother rock of Turonian limestone, covered with Paleocene flint conglomerates, cemented by silica from the Eocene. A 6-hectare parcel overlooking the Domaine. This type of soil could represent a third style of Bourgueil. South-facing slope.


Vine management:
Simple guyot pruning. Yield control before flowering. Plowed vines. Organic farming, Ecocert certification.


Harvest:
Manual, sorting on tables at the end of the rows in the vineyard. Transport of the harvest in flat boxes. Destemming, followed by a second sorting before vinification.


Yield: Approximately 25 hectoliters per hectare.

Vinification:
Fermentation mainly in wooden vats and supplemented in concrete vats. No added yeast, no chaptalization. Daily pumping over.


Aging:
12 months of aging: 20% new barrels, 20% one year, 20% two years, 20% three years, 20% four years.


Service:
serving temperature of 15 to 16 degrees.

Food and wine pairing: The texture is silky. Best enjoyed for its fruit. Peak in 5 to 6 years. Can be stored for 10 years or more. Ideal with flavorful meats and will pair perfectly with game, but it can also accompany white meat and even fish.
