Comments: golden white color. Elegant nose with pronounced mineral notes, flint and stone notes, citrus notes, saline notes. The attack is sharp and direct, the palate is crystalline and marked by great purity, with a very tight structure; elongated, rich, and complex mouth blending mineral and citrus notes. A wine with great length and a saline persistence.
Food and wine pairings:
Langoustine tartare, lime and mandarin zest.
Sushi and sashimi of white fish, sea bass and dorade...
Shellfish, refined oysters, crayfish.
Scallop carpaccio, combava zest.
Turbot, John Dory, monkfish in sauce. Skate with capers, brown butter.
Provençal eels. Line-caught sea bass with oyster sauce and seaweed butter.
Grilled rabbit legs with rosemary, zucchini tian.
Livarot, Epoisses, Curé Nantais.
Grape variety: 100% Melon de Bourgogne.
Surface area: 3 ha.
Age of the vines: 45-55 years.
Terroir: south-west facing slopes. Stony soil. Subsoil: Granite with two micas.
Production: 35 hl. Soil cultivation and tilling, green work.
Vinification and aging: Organic farming since 1975. Biodynamics - Demeter certification since 1998. 100% manual harvest. Reception of grapes by gravity, no use of pumps. Pneumatic pressing. No settling. 100% fermentation with indigenous yeasts. Aging ON LIES in underground concrete tanks.
Tasting: Ideal serving temperature, 10° to 11°C. Wait 1 year before tasting and drink within 10 years.
