Golden white color, crystalline. Subtle and elegant nose with exotic fruits and citrus, notes of white flowers, spices, cumin, dried fruits, roasted almond, mineral and iodized notes. The attack is smooth, the palate is complex and taut with an imposing volume. Impressive and mouthwatering finish with pink grapefruit and almond pit, pronounced saline notes. To be awaited...

Sole meunière & crunchy steamed vegetables.
Brittany lobster, Rivesaltes & Cognac reduction, sweet potato purée with star anise.

Spiced shrimp, coriander whipped cream.

Grapes: 100% Melon de Bourgogne.
Area: 3 ha.
Age of the vines: 45-55 years.
Terroir: South-East facing slopes. Shallow, granular soil. Subsoil: Orthogneiss.
Production: 35 hl. Soil tillage and scratching, green work.
Vinification and aging: Organic farming since 1975. Biodynamics - Demeter certified since 1998. 100% manual harvest. Reception of grapes by gravity, no use of pumps. Pneumatic pressing. No settling. 100% fermentation with indigenous yeasts. Aging ON LIES in underground concrete tank.
Tasting: Ideal serving temperature, 10° to 11°C. Drink within 10 years.
