Technical sheet written by the domaine:

Terroir : Small plot of 0.30 hectares planted in 2011. Small hillside facing East composed of blue and yellow clay.

Grapes : 80% Clairette, 20% Bourboulenc.

Vinification : Manual harvest, direct pressing of whole clusters. Fermentation and aging in concrete tank for 6 months.

Tasting notes : Great white wine from the South, with aromas of flowers and white fruits, fresh wood, roasting, hazelnut, and almond.

Service & Pairing : Serve at 12°C with prawns in pastis, smoked salmon, truffled cheese.
