Maghani, the wine of the Mages in the Quatrains of the great Omar Khayyam (in fact the wine of festive meals...). It is for making this type of wine that I committed myself, and in my eyes, it fully represents me. If you are interested in getting to know me...
It is a selection of the best grapes of grenache, syrah, and, since the 1999 vintage, mourvèdre. A monster of finesse…

Terroir: clay-limestone.

Yield: from 18 to 22 hl/ha.

Destemmed grapes since the 1996 vintage.

Fermentation : from 70 to 90 days depending on the vintage. Punching down by hand.

Aging : 36 months, including 24 months in barrels for 50% of the wine.

Bottling: without fining or filtration.

Tasting:
The Maghani wine is a wine for aging (20 years?) powerful with fine tannins.
In its youth, its palate is on red fruits, chocolate, and peony, evolving later into more complex notes of Morello cherry, spices, and light tobacco.

Food and wine pairings:
To be enjoyed with game, woodcock, roasted geese with spices and candied fruits.
