A biodynamic (Demeter) Riesling from a magnificent plot that benefits from exceptional sunlight: Great aging potential (10 to 20 years), generous aromatic profile, beautiful texture on the palate, and good length. WARNING: The label states "demi-sec" but for us, it is more of a dry wine, with, as is often the case in Alsace, some residual sugars (6g/liter) that make it so appealing! Attention (2): For the environment, the domaine has decided to no longer use aluminum capsules (purely aesthetic), but rest assured, the wine is perfectly protected and the payment of taxes (represented by Marianne, now no longer mandatory) is duly made!

Text from the back label : "We are Achillée. Let’s drink a whole, rich wine that reveals the terroirs. Let’s say I love you to the earth, to the vine, to this bottle, its artisans, and those who share it.".

For the environment, the domaine has decided to stop using aluminum capsules (purely aesthetic), but rest assured, the wine is perfectly protected and the payment of taxes (represented by the Marianne, now no longer mandatory) is duly made!

Vines

Grape variety: 100% riesling

Soil: sandstone on Châtenois exclusively from the Coteaux du Haut-Koenigsbourg Appellation.

Various works: rigorous training, bud removal, removal of secondary shoots. Treatment for 8 years with essential oils to limit copper input, and for 20 years in biodynamics: on this plot, the winemakers are proud to have recorded 152 of the 258 plant varieties listed in the region!


Yield: 55 hl/ha

Cellar

Works: very exclusive settling, excellent raw material. very loose kieselguhr filtration, pre-bottling sulfiting only (2.5 g/hl).

Time:
fermentation of about twelve months, total aging of twenty-two months in stainless steel tanks on fermentation lees.


Tasting

Visual: Light yellow with silver hues, great clarity.

Nose:
intense, with notes of toasted grains, peach, apricot, nectarine, and wine lees. Light undergrowth. Resulting from very high maturity, a rich soil, and long sunshine.

Palate:
Very significant volume, great aromatic generosity balanced by an acidic framework supporting great length. Citrus notes (blood orange, ripe lemon) accompanied by thyme, rosemary, and honey. Finish highlighted by great salinity and marked presence of spices.

Food and wine pairing:
Characterful fish, Japanese cuisine, white meat in cream, carpaccio, gazpacho, lamb with thyme roasted in its juice, fruit salad, macarons, and citrus tiramisu.

Aging potential: around twenty years.


Anecdote

In addition to the richness of the sandstones of the Coteaux du Haut-Koenigsbourg, the plot facing East is the first to benefit from significant sunshine. Indeed, the Hahnenberg (mountain of the rooster) is the easternmost hill of the entire Alsatian foothills. The rooster was therefore the first to crow in the morning, which gave it its name: The mountain of the rooster. Beyond the grace of the anecdote, the climatic virtue of the qualification plays a significant role in the great maturity of the grapes.
