Back label text : "We are Achillée. Let’s drink a whole, rich wine that reveals the terroirs. Let’s say I love you to the earth, to the vine, to this bottle, its artisans, and those who share it.".
ATTENTION : For the environment, the domaine has decided to no longer use aluminum capsules (purely aesthetic), but rest assured, the wine is perfectly protected and the tax payment (represented by Marianne) is duly made!
Technical sheet written by the domaine
Vines :
Composition : 100% riesling from an average age of 55 years.
Soil : gravel on Scherwiller (pebbles from the alluvial cone of the Villé valley, very poor/light, little clay, very reactive), exclusively from the Communal Appellation Riesling of Scherwiller.
Different works : rigorous trellising, removal of in-between shoots.
Average yield : 50hL/ha
Cellar :
Blend : 100% Riesling from Scherwiller
Works : very little clarification, excellent raw material. 2017 provided structure to the wine, while 2018 allowed the flesh to wrap around this backbone. One week before bottling, tangential filtration at low pressure, pre-bottling sulfiting only (4.5g/hL).
Time : fermentation of about five months, aging in stainless steel tanks on fermentation lees. Blending of the vintages one month before bottling.
Tasting :
Visual : Very intense yellow with rose-golden hues.
Nose : Intense, with pronounced notes of citrus, peach, apricot, nectarine, mirabelle, and almond shards. Resulting from a very high maturity.
Palate : Significant volume, balanced by an acidic framework supporting great length. Citrus notes (blood orange, grapefruit) are present. The finish is highlighted by spicy notes.
Food pairing : Characterful fish, Japanese cuisine, carpaccio, gazpacho, fruit salad, macarons, and lemon tart.
Aging potential : about twenty years.
Anecdote :
The great maturity of the vines, low yields, and high planting density confer great maturity to the grapes. This concentration highlights the finesse of the gravel soils of the Scherwiller plain.
