Winemaking :
Alcoholic fermentation in temperature-controlled stainless steel vats, with no malolactic fermentation in order to preserve great freshness, followed by traditional Champagne vinification. The cuvée Blanc de Blancs is aged on lees for a minimum of 36 months to perfect its maturity.
 
Tasting :
Pale, luminous yellow in colour, with fine bubbles, the Chardonnay reveals itself on the nose with subtle aromas of apple, pear, lemon and white flowers.
The attack is pure, precise and invigorating; the palate then reveals great freshness, with the citrus notes perceived on the nose also coming through.
This cuvée, endowed with great freshness, is admirable as an aperitif and will also be an ideal partner for white fish.
